Mini Martha: Banana, Caramel & Nutella Deep-Fried Wontons

I hate Valentine's Day and food blogs on Valentine's Day in particular, where the writers always make desserts to share with significant others. This Valentine's Day, those who are alone should have a yummy dessert to eat too. This recipe is a comforting sweet––it has caramel, Nutella, and bananas, and it's deep-fried. Seriously, what more could someone want in a dessert? I know you probably wouldn’t want to eat something deep-fried, but just for today, you can give in to the temptation. (Also this recipe is super easy.)

Banana, Caramel & Nutella Deep-Fried Wontons

Caramel:
½ cup of sugar
Just under 2 tablespoons of water
½ a cup of heavy cream minus 1 tablespoon
½ a teaspoon of vanilla extract
½ a teaspoon of sea salt

Wontons:
½-1 banana
¼ cup of caramel
1/3rd cup of Nutella
1 egg
Wonton wrappers
Oil (for deep frying)

1. Make the caramel
Put the sugar and water in a heavy-bottomed pot. Turn the heat up to medium and stir the sugar until it dissolves, take out the spoon and place in a candy thermometer. Swirl the pan until the caramel turns a caramel color and reaches 250 degrees. Turn off the stove. Take out the candy thermometer and replace it with a whisk, pour in the heavy cream and vanilla, and whisk until smooth. Add the sea salt and whisk until melted. Place the caramel in a bowl and let cool.

2. Make the wontons
Mash the banana into small pieces, but it shouldn’t be mush. Add in the Nutella and caramel (only use ¼ cup of the caramel made earlier). Stir until combined. Whisk the egg in a separate bowl. Separate the wonton skins and lay flat on a work surface. Use a pastry brush to brush the egg wash onto the edges of a few of the wrappers. Fill each wonton wrapper with a little bit of the filling––no more than a teaspoon. Tightly seal the wrapper. If Nutella comes out of the sides, you are overfilling it. (Make sure to tightly close the wontons, or else they will open during deep frying and the Nutella will go everywhere, ruining the oil). Repeat this with all of the wontons.

Heat at least 2 inches of oil in a pot and place in a candy thermometer. Once the oil reaches 350 degrees, add two wontons at a time. They cook very quickly, so stand over the oil flipping the constantly. Place the wontons when done on a piece of paper towel to drain the oil. Let them sit for a minute and then plate them. You can either drizzle a little caramel on top (which is what I did) or you can dust with powdered sugar. Eat while still hot. Enjoy!
