Coffee Chronicles: Toby's Estate

I'm gonna go out on a limb and say that Australians totally make the best coffee. We may not grow it, but we can sure as heck press it, brew it, and froth it better than the rest. Toby's Estate is, of course, an Australian café and roastery that first opened in Woolloomooloo, Sydney in 1998. I was walking down North 6th in Williamsburg the other day when my friend from Sydney pointed it out. Curious as to what Toby was doing in BK, I stopped by the airy, sunlit coffee spot on Friday.

Given the grand tour by Deaton, head roaster, I learned that not only is this beautiful space (formerly a meat storage warehouse) the perfect spot for a cup of coffee and a Tim Tam*, but it's also where they roast and ship their blends to customers around the world. Toby, who has been in the coffee game for years now, ethically sources the beans from Kenya, Guatemala, Ethiopia, Brazil, and Tanzania. From there, they land in the cupping room where Deaton ensures they're a-ok. Once approved, the beans fall into the huge red roaster sitting adjacent to the bar. Front of house, there's a La Marzocco Strada espresso machine (one of only two in the US) and baristas creating the perfect filter coffees with the aid of scales and timers.
