The holiday season is upon us and this year it's time to HOLIDAY YOUR WAY! We asked members of the OC family to share their favorite holiday recipes. First up, we checked in with Allison Turka of OC Online for her latke "recipe." Happy Hanukkah, everyone!
"The thing about latkes is that everyone makes them their own way, and most people don’t have an actual recipe that they follow. Latke “recipes” are typically passed down from generation to generation; I learned how to make them from my mother, and she learned how to make them from her mother. In my family, latkes officially mean it’s Chanukkah (another example of something that every Jewish family does differently: the spelling the word Chanukkah!). We have our version of a Christmas feast on the first night of Chanukkah. Since I was old enough (and tall enough) to stand at the stove with my mom, I would help her make the latkes: grating the potatoes, the onion, the apples, and mixing it all together (that was always my favorite part). Personally, I like to eat them with sour cream and apple sauce, but again, everyone has their own way of doing latkes."—Allison
Ingredients:
Method:
1. Grate the potatoes, onion, and apple and mix together. Wring out as much liquid as possible—this very important so the latkes are not soggy!
2. Add egg, flour, and salt and mix till combined. You may have to add more/less flour depending on the consistency of the mixture but enough so that when you shape the latkes they stay together.
3. In a medium to large skillet, add enough oil to reach halfway up the latkes. Heat the oil till almost smoking, drop about a quarter cup of the potato mixture into the oil and flatten into a small pancake with a spoon or spatula.
4. Fry until browned then flip and brown on reverse side. You can make the latkes bigger or smaller depending on your preference.
5. Serve with applesauce, sour cream, or your choice of condiment.

- 1 onion
- 1 apple
- 1 egg
- 2 teaspoons of flour (or as needed so that the mix sticks together)
- 2 teaspoons salt
- Canola oil for frying
